Here's a Fortigate Tech Tip on how to disable automatic in a FortiGate firewall.
To configure via FortiGate CLI command:

Firmware Update from Management Service
Upgrade to image 7.xx (07006000FIMG00xx) has been scheduled between Sun Sep 13 02:01:10 2026 and Sun Sep 13 04:00:00 2026.
To stop the upgrade, please use "execute federated-upgrade cancel".
To turn off automatic upgrade, please disable auto-firmware-upgrade in system.fortiguard.
FGT # execute federated-upgrade cancel
This will cancel the upgrade. If the upgrade is immediate or scheduled to happen very soon,
some nodes may have already gone down for upgrade.
Do you want to continue? (y/n)y
FGT # config system fortiguard
FGT (fortiguard) # set auto-firmware-upgrade disable
FGT (fortiguard) # end
Any pending automatic patch-level firmware upgrade
has been removed.
To configure via FortiGate GUI, go to System > Firmware & Registration > Disable automatic patch upgrade.
